Found some wonderful books this week at an estate sale.  Excellent  cookbooks.   All in beautiful condition unless noted.

Excellent soft covered book from 1944 with 55 pages, by the Westinghouse Electric & manufacturing Co Mansfield Ohio. This is a World War II booklet for helping the homefront cope with food rationing.  Also miscellaneous tips on feeding children etc.  Appears to be a monthly release, punched with holes, for keeping in some sort of small 3 hole binder.

So sweet and 1940s.  Even the cover, the big Irish policeman stealing an apple, the veggie/fruit guy in an Italian getup with mustacho, gesturing with his hands.  Oh my. 

Interesting that it discusses the point system of food rationing.  How to use other additions to stretch meals, use other cuts of meat, etc.  Even mentions eating dandelion greens and lamb's quarter plants.  Gives time to doing things fast, for the new housewife that was now working in manufacturing plants and whose life was turned all around with husband, father, brother gone.  Explains that veggies should not be overcooked, etc. 

Daily menus including desserts! 

Center of booklet has "food front flashes" news/tips on rationed foods.  How to stretch butter, reuse oils, make different salad dressings without oil which was rationed.  How to save little bits of this and that and add to soups, stews, gravies.  Extending meats with soya flour or grits or grain cereals was discussed.  I was surprised at the soya flour!  We never used when I was a child but we always added lots of things to the meatloaf. 

Very interesting look at America during World War II.

Wonderful book with lots of receipes for:

creamed mixed veggies
southern style casserole
soybean loaf
succotash
molasses syrup spread
cream of split pea soup
bean chowder
cream of leftover veggie soup
fried chicken
Belgium hare (rabbit!!!!!) fricassee
roast domestic duck
cornstarch pudding
stewed cicken and noodles
and much more.

And appreciate that this was pre crockpots, microwaves, even freezer compartments in your refridgerator (it was size of shoebox), few prepared foods, no frozen foods in stores, everything from scratch.  There were canned veggies, and some fresh in season only.  Meat and oils were rationed (so were clothes, nylons(pre panty hose), shoes, tires, gasoline, etc) , so everyone got only so much per week per a coupon book. Makes you appreciate 2010!!!

 Condition:   very good condition for its age.  Very light smudging on covers.  Some wear to spine and edges, expected at its age. No writing or marks.  Pages slightly discolored  from age. Covers are only paper, so the corners are folded and worn. Pages are very good, no writing, no damage.  Excellent cookbook and look at WWII.

Excellent cookbook for collecting.  And the recipes are  good too.
